The Copper Fox lives inside an 18th-century coaching inn in Lewes — a building that has sheltered travellers, hosted celebrations, and watched the town evolve for over two hundred years. We didn't just move into a space. We inherited a story.

The Building's Story
Old Bones, New Soul
Every surface in The Copper Fox carries the memory of its past lives. The stone that frames the bar once welcomed coaches from London. The timber beams above the dining room supported a hayloft. We've honoured every mark, every crack, every story held in the walls — and added a few of our own.
The Coaching Years
Built as a stopping point on the London to Lewes road, the inn offered travellers rest, food, and fresh horses. The stone archway that still frames our entrance was wide enough for a carriage to pass through into the cobbled courtyard beyond. Upstairs rooms sheltered merchants, gentlemen, and anyone with the coin for a warm bed.
The Public House
As the railway replaced the coaching routes, the inn transformed into a local public house. The courtyard was enclosed, the stables converted, and the bar took the shape we still recognise today. Lewes residents gathered here for bonfire night celebrations, market-day pints, and the kind of long evenings that small towns do best.
The Copper Fox
When we peeled back the plaster, we found the original stone. When we lifted the carpets, we uncovered flagstone floors worn smooth by centuries of footsteps. Every decision in the restoration was the same: keep what's true, add only what's needed. The copper bar top, the hand-thrown ceramics, the natural wine cellar — each new layer respects the ones beneath it.

A Town That Knows Its Own Mind
Lewes has always attracted people who value independence, craft, and doing things properly. It's a town with its own currency, its own bonfire traditions, and a fierce pride in supporting the people and businesses who make it what it is.
The Copper Fox exists because Lewes made it possible. Our suppliers are local, our staff live in the town, our regulars are the shopkeepers and artists and teachers who keep the high street alive. We're not a destination restaurant dropped into a photogenic location — we're part of the fabric of this place.
The best restaurants in Lewes understand this: the food is only half the story. The other half is belonging somewhere, and meaning something to the people who walk through your door every week.

Fell in love with natural wine in a Paris cave and never looked back. Travels to small-scale vineyards across Europe to source bottles with character and story. Believes the best pour is the one that makes you see the food differently.
